I’ve been hearing about the amazing all powerful Vitamix at The Green Yogi for quite some time now, I love the idea of making healthy smoothies and juices at home but was skeptical of the machine and it’s price tag… I have come to the mountain and I am now a believer!
We have a very nice Breville Blender however we never use it. For one it is a PAIN to clean and two it couldn’t do what I really wanted it to do. Which is why for my birthday I was so excited to receive the Vitamix. It truly does everything from smoothies and drinks to soups and purees to baked goods, nut butters, chopped cheese, salad dressings, and everything else in between. It’s now my one stop shop, gone is my need for a food processor or blender and really a mixer too. Plus it’s super easy to clean. All it needs is a little water, a few drops of water, flip the switch to self clean, rinse it out and your done.
My first experiment was a recipe from Gwyneth Paltrow’s new cookbook It’s All Good. I highly recommend this book by the way if you want ideas on how to cook “clean” dishes simply and deliciously at home. I tried the Avocado, Cucumber and Lime Zest Soup, a cold soup perfect for a hot summer day! It was just these ingredients plus a little salt and so yummy.
The second was this morning, a friend had sent me her latest healthy shake concoction of 1 banana, 6 pitted dates, a cup of unsweetened Almond Milk, a handful of ice, and a tablespoon of Peanut Butter. I started with these ingredients then added a tablespoon of flax seeds and 2 handfuls of fresh baby spinach. SO GOOD and simple. You couldn’t taste the spinach at all (my 16 month old slurped his down as did my husband, he renamed the machine the Vitasneak!) it is so deceptively delicious I think it might now become a nightly staple for dessert.
