Gluten Free Pancakes

The weekends were made for relaxing (and yoga at The Green Yogi, obviously).  Unlike during the week when you sip your coffee out of a bean size hole, stuff your face with a banana, or eat a Lara Bar in 4 bites as you drive to work, Saturdays and Sundays you get to take your time.  Turn on your stove, heat up the griddle, and make delicious and healthy pancakes. Don’t forget the fresh fruit, yogurt, and my husband’s must have REAL maple syrup. (He has been known to bring his own supply when dining out!)


Although I have more time on the weekend I don’t have all day, so I use Bisquick‘s GF Pancake mix. It’s a combination of potato flour and starch, sugar, salt, xanthum gum, and some leavening agents. All I had to do was whisk in a cup of milk, 2 Tbsp coconut oil, and an egg.

To get started make sure your griddle or pan is hot and greased (I use coconut oil for this too), scoop about 1/4 cup batter on to your pan (I use an ice cream scoop to get uniform looking hot cakes,) wait until you see some bubbles forming on the top side of your pancakes before you flip them, wait about a minute, then take them off.

I always like to serve pancakes with fresh fruit and plain Greek Yogurt, it’s a really tasty addition to get extra vitamins, minerals, and protein in your breakfast.  Drizzle with a little Canadian gold and your good to go!
