Mmmm Soup

It finally feels like winter here in Southern California!  Not that I’ve minded the warm temps but I love being able to make soup and not sweat while eating it…

You ever see those rotisserie chickens at Whole Foods or Costco? They are super convenient and not very expensive, but I get bored of straight chicken. So I set out to find a soup recipe and found this delicious one from Yummly (appropriately named) plus it’s super easy for a weeknight dinner.

All you need is a rotisserie chicken, chicken broth, fresh spinach, tomatoes, eggs, brown rice, onion, sesame oil, soy sauce, 10 minutes to prep and about 50 minutes to cook. It’s just the rice that takes awhile…

Asian flavors are not really in my wheelhouse and I was a bit nervous to see how this would come out, but it was SO tasty, healthy, and hearty.  Fellow moms, blended up my 9 month old even loved it!
