Fruits and Vegetables

I’m not vegan.

But in honor of World Vegan Day (I didn’t know it existed until about 20 minutes ago…) I decided our my dinner tonight will be “animal-less.”

After deciding what to make for dinner (grilled peppers, eggplant, corn, and portabellos with garlic, basil, and pesto!)

“Eat your fruits and vegetables” is one of the most tried and true recommendations for a healthy diet.  Plant-based foods are rich in antioxidants, essential vitamins and minerals, enzymes, fiber and phytonutrients.  And although I eat meat I love how I feel eating primarily fruits and veggies not to mention they’re so easy to prepare.

So even if you’re not a vegan or vegetarian like me, we still need to eat our daily greens.  Not a home cook?  Here in the South Bay Veggie Grill is the BEST, they truly do amazingly delicious things with vegetables!

Be Inspired,

Kelly
