With the Summer Solstice, the official start of summer, about a week and a half away it’s officially grilling season! Growing up my dad was always the master griller, my husband has bbq skills of his own, but the other week I decided it was my turn on the grill… I consulted my trusty Whole Foods app and found the framework for an awesome turkey burger recipe called “Lakeside Burgers.”
With what I had in our fridge and pantry I made a couple adjustments and if I do say so myself they were incredibly tasty.
1 pound lean ground turkey
8 sundried tomatoes in olive oil, thinly sliced, plus 2 tablespoons olive oil from the jar
2 tablespoons chopped fresh parsley
2 tablespoons chopped basil, I used the frozen cubes from TJ’s
1 teaspoon garlic powder, and a few cloves chopped
Salt and pepper
4 La Brea ciabatta rolls, (I actually had mine on wheat bread:)
mustard for the bread
Lettuce and sliced tomatoes
Place turkey in a bowl. Work in the sundried tomatoes and oil from the jar, parsley, basil, garlic, salt and pepper.
Form mixture into 4 patties, making a thumbprint in the middle of each one to help the burgers cook evenly. Cover and refrigerate about an hour to blend flavors.
Grill patties until firm and browned and all pink is gone from center, about 4 minutes per side. Serve closed or open face on toasted rolls/bread with condiments, lettuce, and tomatoes. I served ours with a fresh garden salad for extra veggies.
