Recipe: Quinoa, Veggie, and Turkey Meatloaf

We always had home cooked family meals growing up.  One dish that always stood out in my mind was my mom’s meatloaf.  As a young kid I was always amazed by a bread loaf shaped piece of meat with a hard boiled egg safely nestled inside!  That’s right, tucked inside the ground beef and breadcrumbs was a cooked egg…

I no longer eat red meat, however I do still enjoy meatloaf.  Especially the recipe I recently tried from whole foods that incorporated ground turkey as well as protein rich super grain quinoa as well as celery, carrots, yellow and green onion, canned tomatoes, egg (not hard boiled), oregano, and red chile flakes.

You can find the original recipe here, however I didn’t have all the called for ingredients so I made a couple adjustments and it was a well balanced delicious meal!

Ingredients

olive oil to coat loaf pan
1 cup cooked quinoa
2 lbs ground turkey
1 cup sliced green onions
1-2 stalks of celery
1-2 chopped carrots
1 small yellow onion
4 garlic cloves
6 oz can tomato paste
1 eggwhite
1/2 tsp thyme
1/2 tsp oregano
1/2 tsp red pepper flakes
1/2 tsp fresh basil
 1 tsp salt
1/2 tsp pepper

Directions

Preheat oven to 400 degrees. Coat loaf pan with olive oil and set aside.  In a large bowl combine quinoa, turkey, onions, celery, carrots, garlic, tomato paste, egg, basil, spices and salt and pepper.  Transfer mixture into loaf pan and bake for 60-75 minutes or internal temp of 165.  Let cool for 5 minutes, then serve.

  1. Pop it in the oven and off to yoga I go, returning to a house smelling wonderful and a fanstastic cooked meal!! Even my skeptical husband LOVED it.
